I'm just repeating what I was told and, to be fair, that statement does not invalidate that - the starting point is the second the corner has been taken.

I suppose it depends on how you define 'the corner being taken' - either as an active thing ('player x has taken the corner') or a passive one ('the corner is about to be taken')?

The principle is that once play has restarted, VAR cannot check/review something which occurred before then (except violent conduct IIRC) - therefore once the throw-in, free kick, corner, goal kick has been taken and the ball is back in play, that's when VAR can start checking things.

A goal is awarded (provided no infringement takes place by the attacking side after the ball is in play).
