"There have been a few Covid cases. So I'm sure once we are up to speed you'll see a different team."

It's debatable.

Is the society simply for pedants, or does it also belong to them?  I don't think it needs to be theirs and I therefore think the apostrophe free version is acceptable.

This cannot stand!

Surely any association of pedants is run by and for pedants and therefore belongs to them?

I'd argue that any non-pedant running a society for pedants purely to avoid the use of the apostrophe is in danger of entering the realm of pedantry themselves and further necessitating its use.

Perhaps an organisation set up for pedants, would benefit from having someone at the helm who is not at all pedantic. 

That way, they could actually get as far as staging gatherings.

Even then, it would be an organisation for pedants, giving the concept of possession.
