My wee pal Guido got particularly upset with Macaroni Cheese and Bolognese but I once seen him fucking apoplectic over an admittedly pish poor attempt at Carbonara. Hearing an Italian screaming a combination of English and Italian profanity because of some watery carbonara in a works canteen is such a pleasure.

It was probably the cream in it he objected to 😉

Bit of a soggy bottom, so might have to blind bake the base first next time. Didn’t stop Mrs. Nosejob and the kids helping me demolish it.

Baking tray in a hot oven for a good 20 minutes before you put the pie on it will help with the soggy bottom.

I've got a ramen broth on the go for tomorrow night. Soy sauce, chicken stock, chili, ginger, garlic and lemongrass. Been simmering for a few hours and got it cooling down before it goes in the fridge overnight. Got a bit of pork fillet to have with it along with some broccoli, carrot and an egg. It's fantastic already, can't wait to see what it tastes like tomorrow.
