Another possibility is that it was Stevie Miller, now of Pollok, who left Celtic that summer.
Does anybody know who it was?

Stevie Miller's a right back and joined Maryhill from Celtic.
Paddy Flannery was a Dumbarton player that season though didn't play on opening day. He signed in 1997-98 and didn't leave until halfway through 2003-04.
My records tell me it was Scott Miller who signed for Stenhousemuir a few weeks later. He had left Partick Thistle in the summer of 2000. He had one last season in Senior football with Morton in 2001-02 before turning Junior.
